Easy Summer Supper Meals To Try
Once summer rolls around, we end up using our stove and oven less and less and opt for light and cool meals for dinner instead. There are quite a few reasons why we may stick more with quick summer recipes than the rest of the year.

If it does, here are some quick and simple supper ideas for hot nights:
Delicious Dinner Salads
You Can make all sort sorts of great salads that make a whole meal. Start with bed of lettuce, then add some sliced tomato, cucumber, bell pepper, onion and any other veggies that you like. Top it off with a source of protein like grilled chicken, sliced sandwich meat like turkey or ham, hard-boiled eggs, tuna, leftover steak etc.
Use your favorite salad dressing and a piece of toast or homemade bread and dinner is done.
When we grill any type of meat in the summer time, we make a little extra and use it on our supper salad the next night.
Tasty Sandwiches
How about some yummy homemade subs for dinner? These are always a big hit with the kids. The basic idea for these sandwiches is the same as the dinner salads we talked about. Grab a sub roll or a french bread add some lettuce, raw veggies and any type of leftover meat, sandwich meats etc. Then pour a bit of your favorite salad dressing over everything and season to taste with salt, pepper and oregano.
You can also make meatball subs. I use frozen meatballs for these and just heat them up in a bit of marinara sauce. Add a little provolone cheese and stick your sub in the toaster oven just long enough to crisp up the bread and melt the cheese. Quick tip - make tuna melts and phyli cheese steak subs instead of meatball ones.
Cold Soups To Keep You Cool
We also enjoy cold soups for supper in the summer. They are perfect for those hot nights when you're not all that hungry and they are quite healthy too. Most of them are made mainly from raw vegetables. A great example is Gazpacho, a cold tomato soup from Spain.
Here's how to make this soup. Add a can of diced tomatoes to your blender. Add some peeled cucumber ( I take the seeds out as well), some green bell pepper and a small chunk of onion. Start blending everything together, and pour in a bit of vinegar and a little olive oil while the vegetables are blending together. Season with salt and pepper to taste and top everything off with some garlic croutons.
