Fresh Black-eyed Peas For The Summer   by Courtney

Warm weather Summer black eyed peas are generally well known inside the Southern states. For the duration of the summer season, You Can get pints of black eyed peas in the grocery store vegetable and fruit area. For the balance of the yr, black eyed peas can be located dried out, tin canned or in the freezer aisle. These healthy peas work well in nearly about nearly anything: stews, preparing salads, vegetarian fritters or or as a dip.

In the summer time, I like them fresh from the ground that morning in a light salad and in the chillier months, I really like to make the old-fashioned dish, "Hoppin' John", boiling dried peas.

This particular summer salad black eyed peas dish makes about six to eight helpings.

Black Eyed Peas Salad Ingredients:

Around 2 lbs of fresh new black eyed peas (or, 2 12-15 oz. jars, drained; or, 1 1/2 cups of dried black eyed peas that have been left to sit in water on the stove or counter in a big pot or bowl overnight)

A couple of bell peppers (I like 1 orange and another red adding more color, however any 2 bell peppers will taste good in this dish)

2 green onions (scallions) finely chopped

Just one cup of white corn kernels, drained or fresh from two stalks of corn)

2 little garlic cloves finely peeled and chopped

1/2 cup cooking oil

3 tbsps . of red vinegar

Two or more tablespoons of fresh natural herbs (parsley, chives, oregano, chervil, thyme, etc. Anything you have available)

1/2 tsp . salt

1/2 teaspoon of pepper

Chop up the peppers into medium, bite sized pieces and take away all of the seeds. Set aside.

If you utilize fresh white or yellow corn, here is a easy way to get the kernels soft when pierced: place around 1 inch of water inside a pot big enough to fit your peeled corn stalks. As soon as the corn is cleaned and de-silked, lean the corn ears vertical in the pot of shallow hot water. Bring to a boil then reduce the heat to med. and cover the pot with a pot lid. The corn will quickly cook in about three minutes. Make use of a knife in order to cut your kernels from your cob.

In a big bowl, blend the olive oil, vinegar, natural herbs, and 1/2 tsp of each of pepper and salt. Once they are combined, pour in the black eyed peas, green onion, bell peppers, kernels, and lastly garlic. Mix until the dressing at the bottom of the bowl coats the pea and veg mixture. Dish out and allow family to add additional pepper and salt to personal taste.
